Here are the ingredients and make as little or as much as you want. Add whatever you need based on your tastes, pretty sure most Moms already know how to cook ;)


One-Pan Veggie Stir-Fry Recipe:


Ingredients:


Assorted vegetables (bell peppers, broccoli, carrots, snap peas)

Tofu or chickpeas (for protein)

Soy sauce

Sesame oil

Brown rice or quinoa


Instructions: 

Sauté chopped vegetables and protein in a pan with soy sauce and sesame oil. Serve over cooked brown rice or quinoa for a quick and nutritious stir-fry.



Budget-Friendly Lentil Soup Recipe:


Ingredients:


1 cup dried lentils

1 onion, diced

2 carrots, diced

2 celery stalks, diced

Vegetable broth

Cumin, paprika, salt, and pepper to taste


Instructions: 

Cook lentils with diced vegetables in vegetable broth. Season with cumin, paprika, salt, and pepper. Simmer until lentils are tender for a hearty and budget-friendly lentil soup.


Easy Chickpea Salad Recipe:


Ingredients:

1 can chickpeas, drained and rinsed

Cherry tomatoes, halved

Cucumber, diced

Red onion, finely chopped

Olive oil and lemon juice dressing

Fresh parsley, chopped


Instructions: 

Combine chickpeas, cherry tomatoes, cucumber, and red onion. Toss with olive oil and lemon juice dressing. Garnish with fresh parsley for a refreshing chickpea salad.
